The eggplant to the parmesan also deserves mention. For the first dishes, the D'Aiello family recommends homemade fettuccinery or bucatini served with rabbit sauce. In winter, the classic pastas and beans return to the menu along with a rich minestrone. The rabbit is served in a mud casserole (the price is 40 euros the ideal rabbit for 4 people): it is prepared according to the recipe of Grandma Olympi. It is the typical dish of the island, cooked here in an authentic way: tasty and fragrant. The people of Ischia love to wet the house's fries in the pot to collect all the condiment: a true ritual, a "jewel." Another specialty is a reinterpretation of cacciatore chicken, prepared with different aromas. The garrison comes from the garden, like the eggplants with mushrooms.
